This coffee is cultivated between 1350 and 1470 meters in the Finca San Jose. The coffee plant enjoys an area rich in ash from the Nevado de Ruiz volcano, with excellent sun exposure and an average temperature during the year between 21° and 25°.

The region of Caldas, in Colombia, has been recognized by the UNESCO as a Cultural Heritage since 2011. And it is in this area that the first production of a very special coffee started.

Harvesting is done following manual picking. The cherries most suitable for this process must be purple and very ripe, and for this reason, they are selected by hand using the picking method during the second or third harvest of the year.

Once the desired humidity has been obtained, the coffee is placed on some Marquesinas to finish drying naturally. The coffee is then selected with sieves, in especially grade 17/18, and placed inside rum barrels and left there for about 3 months to reach the desired results. This quality of coffee emanates a very intense aromatic note of Rum raisin and the cream has a nice hazelnut color. Sweetness and aromatic notes of rum cherry that continue in the aftertaste.

This is a small batch, limited edition released exclusively for our anniversary celebration.

PLEASE NOTE: This coffee has been aged for 90 days and has absorbed some stunning but STRONG Rum flavours. This coffee is BOLD in flavour yet very tasty! 

These beans are alcohol-free, as any alcohol residue from the aging process is evaporated off during roasting.
